WebbI was using an airlock, but I'm starting to think that the lids I bought weren't sealing properly since I've been fighting kahm yeast on a lot of my other ferments. I'm going to invest in some new airlock lids and see how that helps my other ferments before attempting another long ferment like a pepper mash. I always advocate for trashing Kahm infected fermentations, simply because they are a substantially larger foodborne illness risk.
