My family, however, makes this as an entree served with a side of rice, pasta or fresh bread, to sop up all of the delicious sauce. Combining it with orzo in one pan takes it to a whole other level. Makes life so much easier and yummier. This is called "flaming saganaki" and apparently originated in 1968 at the Parthenon restaurant in Chicago's Greektown, based on the suggestion of a customer.
